Simple Vegan Cashew Cheese
Confession, I am a cashew cheese addict. This cashew cheese recipe is the absolute best. It’s delicious on sandwiches and wraps, in salads or baked on pizza and enchiladas.
Cashew Cheese Recipe

Ingredients:
4 cups raw cashews, soaked at least 30 minutes
1/4 cup water
1/8 cup lemon juice
1 tabelspoon apple cider vinegar
1/2 tabelspoon salt
Instructions:
- Blend all ingredients in VitaMix or high powered bllender until super smooth.
- Pour into jar or container and refrigerte for at least an hour to cool and allow to firm up. Keep in refrigerator for uo to two weeks.
