Pickled Onion Recipe
Ingredients:
1 red onion
2 cups white vinegar
1 tablespoon salt
1 tsp - 1 tbsp sugar
Directions:
- Pour vinegar and salt into a small pot. Heat on high heat. Let simmer until salt is dissolved. If you would like a bit of sweetness add 1 tsp - 1 tbsp sugar.
- While vinegar is heating, cut onion into strips then stuff into a 16 oz wide mouth mason jar.
- Once the salt has dissolved, pour hot vinegar over the onions until completely covered. Screw on the lid and place in the refrigerator. When the onions turn a fabulous pink color they are ready to enjoy, usually a few hours or overnight.
